The epigallocatechin gallate (EGCG) decreases the production of beta-amyloid, a protein that forms the plaques that clog the brains of Alzheimer's patients. The main goal of treating Alzheimer's disease is the inhibition of the enzyme acetylcholinesterase and β-amyloidosis.

In an in vitro study, green tea was found to inhibit human acetylcholinesterase, with an IC 50 value of 0.03 mg/ml, and at a test concentration of 0.03 mg/ml, it inhibited β-secretase in 38%.


 
These findings suggest that the tea infusion contains biologically active principles, which acting synergistically can be used to delay the progression of the disease, assuming that these principles reach the brain.
